The 2020 heat presented a serious timing puzzle, so Centralas harvested twice - two tons just before the extreme temperatures and another ton two weeks later. That split pick helped preserve the wine's lift and shape. Both lots were fully destemmed, fermented with native yeast in open-top bins and punched down once daily, then aged for one year in used oak. The wine was bottled unfined and unfiltered, with grapes and sulfites as its only listed ingredients. Strawberry and black cherry meet tart cherry, chaparral and an earthy, savory edge. The texture is supple and fine-boned, with enough structure to keep developing. The couple's work is rooted in South Los Angeles, where their Crenshaw Cru winegarden treats an urban home site as a living polyculture rather than decorative landscaping.\u003cbr\u003e\u003cbr\u003eThe winery works with growers who avoid herbicides and chemical pesticides, favoring certified-organic, biodynamic, regenerative and dry-farmed vineyards whenever possible. Centralas also lists every ingredient used in its wines, packages in lightweight California-made bottles without decorative capsules and has experimented with bottle reuse. In the cellar, naturally occurring yeasts, used oak, minimal sulfites and bottling without fining or filtration are the norm. Adam is pointedly not dogmatic about intervention: if a wine needs help to remain clean and delicious, he will act - and disclose it.
