The vineyards are situated at altitudes ranging from 200 to 400 meters, benefiting from a south-facing orientation that captures ample sunlight while the elevation ensures cooler nights. This diurnal temperature variation contributes to the balanced ripeness and freshness of the grapes. The schistous terraces in Faugères contribute to the wine's minerality and freshness.
50% Rolle (Vermentino), 45% Roussanne, and 5% Carignan Blanc.
On the nose, it offers notes of honeydew melon, juicy peaches, and a touch of vanilla. The palate is full-bodied, featuring flavors of Bosc pear and green melon, balanced by moderate acidity. There are also hints of floral aromas, accompanied by green apple, pear, white nectarine and peach. The ripe fruit character is complemented by a slight beeswax texture, adding a pleasant weight to the palate.
About the Winery
Domaine Ollier-Tailefer is a family-run estate located in the Faugères appellation of the Languedoc region in southern France. Established over five generations, the domaine is currently managed by siblings Luc and Françoise Ollier, with the recent addition of Luc's son, Florent, in 2020. In the mid-1970s, Nicole and Alain Ollier, Luc and Françoise's parents, bottled their first wine under the Ollier-Taillefer label. At that time, Faugères wines held the VDQS ("vin délimité de qualité supérieure") status, which was elevated to AOC ("appellation d'origine contrôlée") in 1982.
The estate has been instrumental in advancing the quality and recognition of Faugères wines. Approximately 80 years ago, the domaine played a pivotal role in advocating for the formation of a regulatory body to enhance the region's wine standards.
In 2001, Domaine Ollier-Taillefer ceased using conventional products, embracing sustainable viticulture practices. By 2009, they transitioned to organic farming and received certification three years later. In 2012, the estate constructed a new cellar using limestone from a quarry near the Pont du Gard. This eco-friendly facility utilizes geothermal energy for temperature control and operates primarily through gravity-fed processes. Additionally, all water used is captured and recycled, reflecting the family's commitment to environmental stewardship.
The estate comprises 36 hectares of vineyards, all certified organic, and produces red, rosé, and white wines under the AOP Faugères designation. All wines are bottled on the estate and marketed directly by the family.
Through a blend of tradition and innovation, Domaine Ollier-Taillefer continues to produce wines that authentically represent the character and quality of the Faugères appellation.
