Made with junmai-grade sake from California and co-fermented with tart Montmorency cherries. This special co-fermented vinegar has the flavor profile of rice wine and the tannins of red wine. It does not taste explicitly like cherries but this unique vinegar would not be possible without them.

American Vinegar Works makes great vinegars from select American ciders, wines, sakes and beers. We combine traditional production methods and great ingredients to deliver novel vinegars that transform cooking and cocktails. Slow fermented and raw, our vinegar is 100 percent made, barrel-aged and bottled in our historic vinegar works. Our unique vinegar making process is so retro-tech that we had to partner with local universities to recreate these machines based on their original 1800s design. Everything is made by us and individually hand labeled in our historic vinegar works which is housed in the blacksmith shop of a mill on The National Register of Historic Places.
