The legendary La Tur cheese is incredibly ooey-gooey, with a moist, edible rind. As is common in the Piedmont region, the cheese is made from a blend of milks--cow, goat, and sheep in this case. Aged just long enough for the cheese to take form, there is nothing to mask the clean flavor. The finished cheese is full-flavored without being pungent.
