Breakside teamed up with friends Jake, Alex, and Abe from Colorado’s Westbound & Down to brew an IPA in the spirit of “more is more,” chasing maximal hop expression and fresh flavor territory. Combining modern West Coast IPA techniques from both breweries, the recipe showcases HBC 586—celebrated for its exotic stonefruit and rhubarb aromas—as the undisputed star. Mosaic and Simcoe play supporting roles, adding familiar layers of resin and berry. With dip hopping at knockout, a touch of wheat for body, elevated bitterness reminiscent of old-school IPAs, and careful cellar work for lasting foam, the result is an IPA designed to satisfy both materially and spiritually. After all, anyone who loves making West Coast IPA needs to be part cowboy and part poet.

About the Brewery

Founded in 2010 in Portland, Breakside Brewery has grown from a neighborhood brewpub into one of the Pacific Northwest’s most celebrated craft breweries—and it’s easy to see why. Known for innovation, balance, and range, Breakside is the kind of brewery that can win a gold medal for a crisp pilsner and a double IPA in the same year—and often does. In 2015, we had the chance to visit Breakside and we even rock their t-shirts still to this day! When we found out they were going to be distributed in our area, we jumped for joy!

Their beers are rooted in Pacific Northwest tradition—bright hops, clean malt profiles, and a respect for process—but they don’t stop there. Flagships like Breakside IPA (a benchmark for the West Coast style) and Wanderlust (a tropical, citrusy dream of a hoppy ale) are joined by a rotating cast of barrel-aged sours, rich stouts, and crisp lagers that showcase the team’s technical precision and creative flair.

Breakside is also fiercely community-minded, supporting local artists, hosting thoughtful collaborations, and running several brewpubs that serve as neighborhood hubs. Whether it’s a boundary-pushing seasonal or a pitch-perfect core release, every beer feels distinctly Oregonian—outdoorsy, honest, and crafted to be shared.
